If you are like a lot of people who are interested in eating better and living a healthier life, you have no doubt seen the vast disparity in cost between good foods and bad ones. It essentially makes it harder for people with lower incomes to maintain a healthy diet because of the way our food system is setup. This is the cycle that we currently find ourselves in, one of obesity, diabeties and record profits from drug and mass food producers.

This is a prime understanding that you must grasp if you want to truly “get” what is happening with health and food in our country and around the world.

Babies Born with Multiple Sclerosis is linked to Lack of Sunlight

I just read this article by Ethan Huff about how mothers who don’t get enough sunlight can give birth to babies with multiple sclerosis. It definitely is a little scary. The study out of Australia found that natural sunlight is extremely important to the development of babies. Researchers found that mothers who do not get enough sunlight during the first 90 days of their pregnancy bear children with an increased risk of multiple sclerosis later on in life. A lack of sunlight causes problems with the child’s development of their central nervous system and immune system. Because of this, the child will be more likely to develop MS.

The study evaluated birth records from 1920-1950 connecting low vitamin D levels to MS. Research revealed that the majority of the MS patient were born during November and December in the Southern Hemisphere, which would have meant that the early days of the babies’ development were during the winter months when it is likely that the mother got minimum sunlight exposure. Research also discovered that very few MS patients were born between May and June when their first trimesters would have been during summer months, when it is likely that the mothers were exposed to more sunlight and thus vitamin D.
The studies showed that the risk of MS was approximately 30% higher for patients who were born during the winter months (that’s a lot higher!). Research also found that MS became increasingly more prevalent the further away from the equator. This indicated that sunlight exposure – and vitamin D – is directly linked to MS susceptibility.
Now, we all know that you can’t force the sun to come out. So if natural sunlight is not available, mothers can supplement with natural vitamin D3 in order to help their babies be healthy. Weighing the numbers and the easy solution to the problem, why wouldn’t mothers implement this simple solution? Go out in the sun! If there’s no sun, take some vitamin D – its inexpensive and easy, all you have to do is swallow a little pill to help prevent your child from increased risks of MS.

Drinking Soda Linked to Pancreatic Cancer

I was just reading this article about soda. The article, written by David Gutierrez, said that soda has recently been linked to pancreatic cancer. Well, we all knew soda wasn’t the healthiest thing on the market, especially diet soda filled with aspartame, but who knew it was THAT bad for us?!

What The Hell is Trans Fat?

As a consumer today you no doubt have seen the marketing campaigns and labels that say 0 grams “Trans Fat.” So what is trans fat and what does that really mean. Well good question, because most people don’t really know.

Trans fat is really just another name for an unsaturated fat that contains trans-isomer fatty acids. So to start out, there are two type of fats. Saturated fats which are typically found in processed foods and animal products and unsaturated fats which are typically found in nature and in foods such as nuts, olives and avocados. These unsaturated fats are generally referred to as good fats and can actually help certain aspects of health. Another easy way to distinguish the two fats is a saturated fat is solid at room temperature and an unsaturated fat is liquid at room temperature, which also give you a pretty good picture of what that particular fat is going to do once inside your body.

Now, onto the Trans part, this is where it gets a little more interesting. Trans fat or “trans fatty acids” are not naturally occurring at all although technically classified as an unsaturated fat. It is manufactured in a lab by adding hydrogen to vegetable oils to make them more solid in a process called hydrogenation.
